BISCUIT ROLLS – Fast and Easy

Happy St. Patrick’s Day!  I hope you are feeling lucky!

A good bread recipe that is also quick is about as difficult to find as a four-leaf clover.  Need some fast and easy bread for dinner, or breakfast? These are AMAZING! They cook up like a roll, but have the consistency of a biscuit.

Preheat to 350 degrees.
Time to cook: 15-18 min (but eyeball works best)

Makes 12 biscuits.

INGREDIENTS:
2 cups self rising flour
1 cup milk (any regular milk will do, but the higher the fat, the heartier the biscuit)
4 tbls (tablespoons) mayonnaise
Spray oil

Mix ingredients in a bowl until forms a dough. Grease muffin pans with spray or grease of choice. Spoon each 3/4 full with dough. Bake until tops start to brown.  Times will vary with ovens so start watching at about 10-15 minutes and then you can determine your ideal time with your oven.  Remove when the tops start to brown and check your time. 

Note: for slightly lighter texture, substitute water for milk.  If you do this and save any for later, they will be more dry and crumbly and harder to keep together while eating.  But I bet you will eat them all at one sitting…. mmmm!

Note: If you do not have self-rising flour, substitute for 1 cup of self-rising flour by placing 1-1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup. Add all-purpose flour to measure total of 1 cup. Double that if you are using the full 2 cup recipe above.

Serve with gravy, butter and jelly, honey, or alone.  ENJOY!
